Freshly Brewed: Introducing Birch Coffee for O.N.S

If you have the same relationship with coffee as us, then we can agree on a few things. One: Getting up in the morning on any given day without a strong hit of caffeine is just asking for chaos. Two: Receiving coffee in a lukewarm or burnt state is just not acceptable. And three: What ever happened to the smiling neighborhood barista?
The guys over at Birch Coffee, co-founders Paul Schlader and Jeremy Lyman are putting in real effort, dedication and passion into their craft, and they’re turning their NYC dreams into major success. You’d be hard-pressed to find a coffee shop with baristas as knowledgeable and friendly as Birch. We’re incredibly excited to be working with Paul and Jeremy, and we’re happy to announce that effective immediately, we’ll be carrying their specialty coffee in our Soho flagship at 71 Greene. This way, you can enjoy some of the finest roasted goodness while you shop in Soho.
The O.N.S crew made a trip to the Birch HQ located in Long Island City. There, Paul and Jeremy gave us a tour, and they showed us how they roast every bean that goes into a cup of their artisanal coffee. They were even nice enough to treat us to a Coffee Cupping. To those not familiar, “cupping” is very similar to wine tasting. It’s the professional practice of observing the tastes and aromas of brewed coffee. We’ll save the lecture, but trust us, there’s a lot that goes into specialty coffee. It’s not all about a well-selected bean, but one that’s beautifully roasted too.
