At Home: Cooking with John Cho

During this time of self-isolation in New York, we have all had opportunities for downtime and that time can be taken up through a whole host of hobbies including reading, making art, playing Animal Crossing, or going isolated walks. The most practical option has to be cooking and trying out new recipes that you love from around the world, but that depends on if you’re confident in the kitchen. The fact is there are many simple recipes from around the world and everyday essentials that everyone can explore. We bought John Cho from 9 Tails NY cafe in Harlem who has been making his favorite dishes like the Tornado Omelet, the Tamago Sandwich (aka the Japanese egg salad sandwich) that are yet to hit the menu at the cafe and tips on how to pour the perfect French Press brew! We hope you get to try out some of these dishes while at home for a perfect snack or when you need a quick pick me up.

How to make a Korean-style Tornado Omelet:

John Cho: A few years ago, one day I was watching a Korean news channel and somebody was making a Tornado omelet. I loved the technicality of using the 2 chopsticks to swirl the eggs. The variation is a little different from the Japanese version called the Omurice. I like how the Korean version covers the entire scoop of rice almost like a comfy broken-in t-shirt.

Ingredients that you will need:

  • – 2 eggs
  • – A teaspoon of olive oil
  • – A scoop/bowl of leftover brown or white rice
  • – Salt and pepper to taste

Here is how to make a Tornado Omelet:

It’s actually a simple dish to make with less than 5 ingredients, but there’s a degree of difficulty because you have to get the technique and timing right. This comes with practice!

  1. 1.) Heat up the pan for a minute
  2. 2.) Add your olive oil, let the pan heat the oil for 30 seconds and spread the oil across the surface of the pan.
  3. 3.) Pour the eggs into the pan and spread the eggs so it fills the surface of the pan
  4. 4.) Take one chopstick in each hand and starting from opposite sides of the omelet, slowly drag the two chopsticks towards each other thereby creating a vortex. This will create the “tornado” effect.
  5. 5.) Once you get a couple of rotations and you got some ripple effects, quickly place the omelet on top of your rice on a plate, covering the full scoop of rice
  6. 6.) Salt and pepper to taste and enjoy!

Creating your own Japanese Tamago Sandwich

The Tamago sandwich is a famed egg salad that originates from Japan and is sold as a simple meal from a grocery store, but for those who’ve visited Japan, even the food found at the 7/11 is amazing. The Tamago variation differs from the standard sandwich due to the Kewpie mayo, found typically at Japanese grocery stores. Kewpie mayo has a slightly more sour taste because of the added rice wine vinegar, that enhances the taste of the eggs and offering a delicious pillow of umami for the sandwich.

Ingredients you will need:

  • – 2/3 Medium to hard-boiled eggs
  • – 1/4 stick of butter
  • – 2 slices of white bread
  • – Salt and pepper to taste
  • – Kewpie mayo (Japanese mayonnaise)

Here how to make the Tamago Sandwich:

  • 1.) Set aside one of your boiled eggs for presentation
  • 2.) In a small bowl mash up the boiled eggs with a fork
  • 3.) Add the Kewpie mayo, salt and pepper to taste
  • 4.) Butter the 2 pieces of bread
  • 5.) Spread the egg and mayo mixture on your bread to your desired consistency
  • 6.) Place the set aside boiled egg in the middle of the sandwich
  • 7.) Press down and cut the sandwich in half ensuring the boiled egg is cut evenly
